As a parent, I learned how challenging it can be to get the kiddos to eat a balanced diet. My precious 12-year old son
believes putting ketchup on your burger means he is eating fruit. I made the mistake of enlightening him to the fact that tomatoes are a fruit.
Before I had children, I did not understand all of the hype about sneaking vegetables into recipes. My theory was that we are parents, they are children and they should eat what we prepare for them. HA! Apparently, I thought I knew everything about kids before I had my own. Didn’t we all?
So, I set out to find different ways to make vegetables so that all members of our family would enjoy them. Let’s be honest, don’t you get tired of eating your favorite vegetable prepared the same way even when we like eating them? I decided to focus on one veggie to start just to see where my search would take me…the winner this week is ZUCCHINI!
The first recipe I found was Zucchini Tots and it was a hit! This positive feedback from my family gave me the motivation I needed to keep looking.
Next I decided to try Baked Zucchini Chips. Here is the funny part about this one. I told my son they are normally served as snacks or appetizers, but I decided to “let” him have them for dinner as a treat!
With Cheesy Zucchini Rice, I don’t even think he noticed the vegetable in it and yet, my hubby and I enjoyed the flavor of the zucchini.
The lesson I learned is that sometimes as Moms and Dads we have to be a little sneaky to help our children get what they need. We do it because we love them and want them to grow up healthy. And just because I love him, I decided to bake my son a batch of these moist, delicious Glazed Lemon Zucchini Cookies from the Mr. Food Test Kitchen. I couldn’t keep him away from the cookie jar!
