The Ultimate Thanksgiving Dinner

Thursday, November 15th, 2012

Classic Roast Turkey RE a The Ultimate Thanksgiving DinnerEvery year I get the same question: What am I serving for Thanksgiving? I really think they expect me to say something bizarre and at times I feel like making up something really off-the-wall just to get their reaction.

The truth is, when it comes to the big bird day, I am a true traditionalist. I always host it at my house so I can make all my favorite recipes that I grew up with. I can assure you won’t find a chicken stuffed with a duck stuffed in a turkey. All you’ll find is a classic roasted turkey with pan dripping gravy, real mashed potatoes, traditional stuffing that my mom used to make, and lots of veggies. For me, the day just wouldn’t be special without roasted butternut squash just oozing with butter and brown sugar.

Thanksgiving Side Dish Survival Guide

Monday, November 12th, 2012

Fast Mashed Potatoes and Parsnips RE Thanksgiving Side Dish Survival GuideHello there everyone. Can you believe that Thanksgiving is coming up next week? I’m still munching on leftover Halloween candy, so it’s surreal that I’ve got to start thinking about Thanksgiving already. There may not be another holiday where cooking is as important as Thanksgiving. With the younger generations in my family beginning to take on the brunt of the holiday cooking, I’m starting to feel the pressure as I take on more and more responsibilities for the big day.

While I’m not getting called upon to take on turkey duties (thank goodness!), I am in charge of preparing a few of the side dishes. While part of me wishes I could just hide out in the other room and watch football like my brother, another part of me is excited to try my hand at a few sides and test my own culinary skills.

Pumpkin Pie Muffins RE Pumpkin Pie Muffin Recipe & More Easy Pumpkin Recipes

Don’t worry – the Mr. Food Test Kitchen has plenty of amazingly easy pumpkin recipes that use canned pumpkin, which is in plentiful supply at your local supermarket! Now, we love ourselves some classic pumpkin pie but lately, we’ve had a hankering for some sweet bread, the kind that’s bursting with pumpkin spice. And then we rediscovered these on MrFood.com: Pumpkin Pie Muffins, the best combination of pumpkin pie and sweet bread! We love that they’re in muffin-form, which makes ‘em a quick breakfast-on-the-go or a simple but satisfying afternoon snack. Best of all, they were a cinch to make – always a highlight for me!

The ingredient list was simple (just five!) and we used one bowl for all our prep – so barely any cleanup. This recipe was so quick and easy, in fact, that by the time we were spooning out batter into muffin tins, we thought, that’s it?! This is definitely one of those fast “company’s coming!” breads to whip up when you’re short on time.

Behind the Scenes: Millionaire’s Cake

Thursday, October 4th, 2012

I was so excited about this cake, because not only was it really easy to make but it was actually fun, too! The plus side about being the Test Kitchen chef is I get to try everything I create — and this happened to be one of the most delicious cakes I have ever tasted.  It’s so light and refreshing, yet it tastes so decadent, like a million bucks. It may look difficult to make, but it isn’t — and you don’t have to be rich to make it!

First I slice my prepared cakes in half to make 4 layers.

Slow-Cookin’ Recipe Round-up

Tuesday, October 2nd, 2012

Gone are the days of afternoons spent in the kitchen preparing elaborate meals. It needs to be easy! However, it still Cheesy Buffalo Chicken Dip RE Slow Cookin Recipe Round upneeds to be nutritious, well balanced and most of all, taste good.

My mom never used a slow-cooker when I was growing up. I think maybe she had a small one that she used to keep hot dips warm throughout the evening when she entertained. It wasn’t until my grown-up life that some of my friends introduced me to slow-cooking. Now with a husband, two kids, a dog, a job and a home to take care of, my slow-cooker has become a very good friend to me. Almost like my own personal Chef. I do the prep work and she does the rest.

When I find a great recipe, I share. I email, post on Facebook or even bring it to the attention of the Mr. Food Test Kitchen as a potential show idea.

I have stumbled upon a number of amazing slow-cooker recipes that I would like to share with you. Remember, slow-cookers aren’t just for stew and pot roast. You may be surprised at some of the recipes I have for you.
